This qualification reflects the role of commercial cooks who demonstrate proficiency across a broad spectrum of cookery skills. These professionals apply sound judgement and discretion in their work, supported by a strong understanding of kitchen operations. They perform their duties with a degree of autonomy and limited supervision, and may also provide guidance and operational support to fellow team members.
The following 25 units of competency are to be completed to achieve this qualification:
Academic Qualifications
Applicants must have completed Year 10 or an equivalent qualification.
Minimum Age
Applicants must be at least 18 years of age at the time of enrolment.
English Language Proficiency
Applicants are required to demonstrate English proficiency with a minimum overall score of IELTS 5.0, PTE 36, or an equivalent internationally recognised English language test.
Commercial Cookery Package – 2 Years
Commercial Cookery Package – 1.5 Years
This qualification prepares graduates for employment as commercial cooks in a variety of hospitality settings, including restaurants, hotels, clubs, pubs, cafés, cafeterias, and coffee shops.
A total of 360 hours of supervised work placement is integrated throughout the duration of this course. KCBT provides comprehensive support and resources for work placements through its dedicated Work Placement Pack. All practical training opportunities are coordinated and facilitated by KCBT to ensure meaningful industry engagement.
The unit SITHCCC020 – Work Effectively as a Cook requires students to demonstrate their cookery and service skills across a minimum of 48 complete food service periods within an operational hospitality environment where customers are actively served. This unit is undertaken as part of the practical work placement component of the course.
